Banana Walnut Gift Cakes
- 2 cup flour
- 3 tsp baking powder
- 2/3 cup sugar
- 1 None medium egg
- 1 cup low-fat milk
- 1/3 cup oil
- 1 None medium banana, peeled and diced
- 1/4 cup walnuts, chopped
- Preheat oven to 325u0b0F. For the batter, mix together the flour, baking powder and sugar. In a separate bowl, whisk together the egg, milk and oil. Add the flour mixture then stir in the chopped banana and walnuts. Divide between 6 small, greased, ovenproof dishes with airtight sealable lids, about 1 1/2 cup capacity each. Bake in the center of the oven for about 35 mins, until a knife comes out clean.
- Place the lids in boiling water for 2 mins to sterilize then dry on a dish towel. Remove the cakes from the oven and seal them immediately with the sterilized lids. The cakes should keep, unopened, for about 4 weeks.
