Spinach Squares
- 2 (10 oz. each) pkg. frozen chopped spinach, thawed
- 3 Tbsp. butter or margarine
- 1 small onion, chopped
- 1/4 lb. mushrooms, sliced
- 4 eggs
- 1/4 c. fine dry bread crumbs
- 1 (10 3/4 oz.) can cream of mushroom soup
- 1/4 c. grated Parmesan cheese
- 1/8 tsp. each: pepper, basil and oregano
- Squeeze out as much moisture from spinach as possible.
- Set aside.
- Melt butter in skillet.
- Add onion and mushrooms; cook, stirring, until soft.
- In bowl, beat eggs lightly; stir in onion mixture, bread crumbs, soup, 2 tablespoons cheese, pepper, basil, oregano and spinach.
- Pour into well greased 9-inch square baking pan; sprinkle with remaining cheese.
- Bake in a 325u0b0 oven for 35 minutes or until edges begin to brown.
- Serve warm; or let cool, cover, refrigerate and serve cold.
