Chocolate Mascarpone Stacks
- 7 oz chocolate, broken into pieces
- 1/2 cup milk
- 18 None thin crisp cookies
- 1 cup mascarpone cheese
- None None mixed berries to serve
- None None cocoa powder to dust
- Place 5oz of chocolate in a heatproof bowl with milk. Place bowl over a pan of simmering water, stirring occasionally, until chocolate has melted. Remove from heat and cool.
- Place the remaining chocolate in a separate bowl and melt as above. Using a teaspoon or piping bag, drizzle over 6 cookies. Leave to set.
- Beat mascarpone until softened. Add chocolate milk. Stir until the mixture is thick and holds its shape. Spoon half the mascarpone mixture onto 6 plain cookies. Cover with remaining plain cookies. Top with remaining mascarpone mixture and the chocolate-drizzled cookies. Serve with berries and dust with cocoa.
