Passion Fruit Sorbet
- 3/4 cup granulated sugar
- None None Passion Fruit Sorbet
- 12 None passion fruits, pulp removed
- 1/3 cup orange juice
- 2 tbsp lemon juice
- 2 None egg whites, lightly beaten
- To make sugar syrup, stir sugar and 1/2 cup water over medium heat, without boiling, until sugar dissolves. Bring to a boil, reduce heat and simmer, uncovered, without stirring, for 5 mins. Let cool to room temperature.
- To make passion fruit juice: Press passion fruit pulp through fine-mesh strainer. This should make 3/4 cup juice. Reserve 1 tbsp seeds.
- Combine passion fruit juice, orange juice, passion fruit seeds, sugar syrup and egg whites. Transfer to a shallow freezer-proof container. Cover and freeze until firm. Break up sorbet then beat until combined. Return to container, cover and freeze until firm. Repeat 2 more times.
- Transfer to a loaf pan, cover with foil and freeze until firm.
- Serve scooped in glasses or cones.
