Quark And Mango Tarts
- 2 None egg whites, at room temperature
- 1/2 cup sugar
- 1 cup flaked coconut
- 1 tub (8 oz) quark cheese
- 1 tsp vanilla bean paste
- 1 None mango, cheeks removed and thinly sliced
- Preheat the oven to 350u0b0F. Grease four 3 1/2-inch tart pans with removable bottoms. Place on a baking pan.
- Beat the egg whites in a clean, dry bowl with an electric mixer, until soft peaks form. Gradually beat in 1/4 cup of the sugar, 1 tbsp at a time. Beat well between each addition until the sugar dissolves. Fold in the coconut.
- Spoon the coconut mixture equally into the prepared pans. Level the top. Bake for 8 mins or until light golden. Cool the tarts slightly.
- Combine the quark, vanilla and 2 tbsp of the remaining sugar in a medium bowl. Spoon the mixture over the coconut crusts in the tart pans. Level the surface. Refrigerate for 15 mins.
- Preheat the broiler to high. Remove the tarts from the pans. Place on a baking pan. Arrange the mango over the top of the quark mixture. Sprinkle with the remaining 2 tbsp sugar. Broil for 1 min or until sugar caramelizes. Serve.
