Sweet Chili Chicken Summer Rolls

  1. Combine sweet chili sauce, soy sauce and lemon juice. Toss 2 tbsp with chicken. Reserve remaining to serve.
  2. For each summer roll, dip 1 sheet of rice paper in warm water to soften. Place on a clean tea-towel. Top with noodles, chicken, carrot, pepper, bean sprouts and herbs. Fold in ends then roll up tightly to enclose. Repeat with remaining ingredients to make 16 summer rolls.
  3. Serve with reserved sauce.
