- 4 3/4 cups ground almonds
- 1 cup powdered sugar
- 1/2 cup butter, chilled, chopped

- Combine ground almonds and powdered sugar in a food processor. Pulse to combine. Add butter and pulse until mixture resembles fine breadcrumbs. - To make the filling, heat butter and sugar together in frying pan over low heat, stirring, until sugar dissolves. Add apples and cinnamon. Cook, stirring, for 8-10 mins, until apples are just tender. Allow to cool.
- Transfer filling to prepared pan. Cut remaining rolled dough into 2/3 inch wide strips. Arrange over pie in a lattice pattern. Trim edges and brush with remaining heavy cream. Bake for 10-15 mins, until pastry is golden. Serve in wedges with vanilla sauce.
