Almond Apple Pie

  1. Combine ground almonds and powdered sugar in a food processor. Pulse to combine. Add butter and pulse until mixture resembles fine breadcrumbs. With motor running, gradually add enough heavy cream for dough to form a ball around the blade. Shape into a disc, wrap in plastic wrap and chill for 15 mins.
  2. Preheat oven to 350u0b0F. Lightly grease an 8 1/2 inch pie dish. Roll out 2/3 of dough into an 1/8 inch thick disc then use to line prepared dish. Trim edges and prick base with a fork. Bake for 10-12 mins, until firm and lightly golden. Allow to cool.
  3. Meanwhile, roll remaining pastry out into an 1/8 inch thick rectangle. Chill until required.
  4. To make the filling, heat butter and sugar together in frying pan over low heat, stirring, until sugar dissolves. Add apples and cinnamon. Cook, stirring, for 8-10 mins, until apples are just tender. Allow to cool.
  5. Transfer filling to prepared pan. Cut remaining rolled dough into 2/3 inch wide strips. Arrange over pie in a lattice pattern. Trim edges and brush with remaining heavy cream. Bake for 10-15 mins, until pastry is golden. Serve in wedges with vanilla sauce.
