White Chocolate And Almond Blondies
- 1 1/3 cup butter
- 10 oz white chocolate, roughly chopped
- 4 cup all purpose flour
- 2 tsp baking powder
- 1 cup brown sugar
- 1 cup sugar
- 4 None eggs
- 1 None vanilla pod, halved lengthways, seeds scraped out with the back of a knife
- 1 cup salted almonds, roughly chopped
- Preheat the oven to 325u0b0F. Grease a 13 x 9 inch brownie pan and sprinkle with flour. Melt the butter and 8 oz chocolate in a double boiler, stirring occasionally. Allow to cool.
- Sift the flour, baking powder, and a pinch of salt into a bowl. In a separate bowl, beat the sugars, eggs, and vanilla seeds until thick and creamy. Stir in the chocolate mixture. Then add the flour mixture. Spoon into the prepared pan and smooth out. Sprinkle over the almonds and remaining chocolate. Bake for 35-40 mins, until a skewer comes out clean. Allow to cool, then turn out of the pan and cut into 30 squares.
