Churros With Chocolate Dipping Sauce
- 1 cup 2% milk
- 1/2 cup butter, at room temperature
- 3/4 cup granulated sugar
- 1 cup all-purpose flour + 2 tbsp
- 3 None eggs, at room temperature
- None None vegetable oil, to deep-fry
- 2 tsp ground cinnamon
- 1 (13.5 oz) can sweetened condensed milk
- 7 oz dark chocolate, chopped
- Bring milk, butter and 1/4 cup sugar to a boil. Add flour, stirring until mixture comes away from the side of the pan and forms a ball. Transfer to a food processor. Add eggs, 1 at a time, pulsing until combined between additions. Mixture should be thick and glossy. Transfer to a piping bag fitted with a 1/3 inch star tip.
- Heat oil in a large heavy-bottomed saucepan over medium heat. Working in batches, carefully pipe 6 inch lengths of dough into oil. Deep-fry churros for 2-3 mins, or until golden. Drain on paper towels. Combine remaining sugar and cinnamon. Roll hot churros in sugar mixture to coat.
- Meanwhile, stir condensed milk and chocolate over a double boiler until melted and smooth. Serve churros with sauce.
