Chocolate Mousse Puffs
- 8 oz white chocolate chips
- 4 oz cream cheese, softened
- 3/4 cup sugar
- 2 None egg yolks
- 2 1/2 cups cream, whipped
- 1 cup water
- 5 tbsp butter, chopped coarsely
- 1 cup all purpose flour
- 2 tbsp cocoa powder
- 4 None large eggs
- None None extra cocoa powder for dusting
- To make mousse filling, melt the chocolate chips. Beat cream cheese, sugar and egg yolks in large bowl with electric mixer until smooth. Just before melted chocolate sets, beat into the cream cheese mixture then fold in cream, in 2 batches. Cover, refrigerate until cold.
- Preheat oven to 425u0b0F. Grease baking trays.
- Bring water and butter to a boil in medium saucepan. Add sifted flour and cocoa, beat with wooden spoon over heat until mixture comes away from base and side of pan and forms a smooth ball.
- Transfer mixture to small bowl, beat in eggs, one at a time, with electric mixer until mixture is thick and glossy. Drop level tablespoons of mixture, about 2 inches apart, on prepared baking trays, and bake for 15 mins. Reduce oven to 400u0b0F.
- Split puffs in half. Use a teaspoon to scoop out any uncooked mixture, return halves, cut-side up, to oven trays. Bake puffs for about 10 mins or until they are crisp. Cool on wire racks.
- Spoon mousse filling into half of the puffs, replace tops. Serve dusted with extra sifted cocoa powder or drinking chocolate.
