Chorizo And Spinach Pizzettas
- None None FOR THE PIZZA DOUGH
- 1 pkg (1/4 oz) instant yeast
- 1 tsp fine table salt
- 1/2 tsp sugar
- 2 1/2 cups flour
- 2 tbsp butter, melted
- 2 tbsp olive oil
- None None FOR THE TOPPING
- 5 oz baby spinach leaves, finely shredded
- 2 cloves garlic, chopped
- 4 None anchovy fillets, drained and finely chopped
- 1 tbsp olive oil
- 1/4 cup coarsely chopped fresh flat-leaf parsley
- 1 None cured chorizo sausage, thinly sliced
- 5 oz manchego cheese, grated
- For the pizza dough, combine yeast, salt, sugar and sifted flour in medium bowl. Stir in butter, oil and about 3/4 cup warm water to mix to a soft dough. Knead dough on floured surface about 5 mins or until smooth and elastic. Place dough in large oiled bowl; cover. Let stand in warm place about 1 hour or until dough doubles in size. Punch dough down with fist; knead dough on floured surface until smooth.
- Preheat the oven to 425u0b0F. Oil 2 large baking pans; line with parchment paper.
- Place spinach, garlic, anchovies, oil and parsley in a medium bowl.
- Divide dough into eight equal pieces. Roll each piece into a 6-inch round. Place on prepared pans.
- Spread pizzas with spinach mixture. Top with chorizo and cheese.
- Bake pizzettas about 8 mins or until browned and crisp.
