Chorizo And Spinach Pizzettas

  1. For the pizza dough, combine yeast, salt, sugar and sifted flour in medium bowl. Stir in butter, oil and about 3/4 cup warm water to mix to a soft dough. Knead dough on floured surface about 5 mins or until smooth and elastic. Place dough in large oiled bowl; cover. Let stand in warm place about 1 hour or until dough doubles in size. Punch dough down with fist; knead dough on floured surface until smooth.
  2. Preheat the oven to 425u0b0F. Oil 2 large baking pans; line with parchment paper.
  3. Place spinach, garlic, anchovies, oil and parsley in a medium bowl.
  4. Divide dough into eight equal pieces. Roll each piece into a 6-inch round. Place on prepared pans.
  5. Spread pizzas with spinach mixture. Top with chorizo and cheese.
  6. Bake pizzettas about 8 mins or until browned and crisp.
