Lentil Burgers With Braised Beets And Yogurt Sauce

  1. For the lentil burgers, pulse the lentils, onion, carrot, mushrooms and egg in a food processor until finely chopped. Mix in the breadcrumbs and paprika and season. Form the mixture into 8 patties. Heat the oil in a frying pan over medium heat and cook the patties for 10-12 mins, turning.
  2. For the beets, heat the butter in a frying pan. Add the beets and saute them for 3-4 mins, stirring. Pour in the stock and simmer for 4-5 mins, until the beets are tender. Stir in the lemon zest and 2 tbsp lemon juice. Season.
  3. To make the sauce, mix the yogurt and mint together and season. Arrange the beets and lentil burgers between 4 plates and spoon the sauce on top.
