Honey Cookies

  1. Preheat oven to 350u0b0F. Lightly grease and line 4 baking trays with parchment paper.
  2. Cream butter and sugar together until light and creamy. Add egg yolk, beating well to combine. Sift flour and baking soda over top then fold in along with honey until just combined. Cover and chill for 30 mins.
  3. Knead dough gently on a lightly floured surface. Roll out until 1/4 inch thick then cut out 1 3/4 inch rounds and arrange on prepared trays. Bake for 10-12 mins, until firm to the touch. Let cool on trays.
  4. Meanwhile, to prepare the filling, whip egg white until frothy. Gradually add powdered sugar, beating well after each addition. Add butter, stirring until combined. Tint 1/2 the icing pink. Sandwich 1/2 the cookies together with white icing and the other 1/2 with pink. Let filling firm up before serving.
