Spicy Cheese Bread
- 3 2/3 cups self-rising flour
- 1 pinch salt
- 3 tbsp butter, chopped, plus extra to serve
- 1 cup milk
- None None Topping
- 4 tbsp butter
- 2 oz aged cheese, grated
- 1 tsp mustard
- 1/2 tsp chili sauce or a few drops Tabasco sauce
- Preheat the oven to 375u0b0F Lightly grease a baking sheet. For the dough, sift flour and salt into a large bowl, then add the butter, rubbing in lightly with fingertips. Make a well in the center. Pour in milk. Using a blunt knife, mix quickly into a soft, sticky dough. Do not overmix. Turn out onto a lightly floured surface. Knead lightly, then press or roll out into a circle, about 1 1/2 inches thick. Place on the prepared baking sheet.
- For the topping, combine all ingredients in a small saucepan and heat gently until butter and cheese are melted. Spoon on dough, then bake 20-25 mins, until golden and firm. Cool slightly on a wire rack. Serve warm with extra butter.
