Garlic Prawns And Salsa On Crostini
- 8 slices ciabatta
- 1 None tomato, cored and finely diced
- 1 None small yellow pepper, deseeded and finely diced
- 125 g cucumber, deseeded and finely diced
- 1 None small onion, peeled and finely diced
- 3 tbsp sherry vinegar
- 5 tbsp olive oil
- 1 pinch sugar
- 200 g raw peeled prawns
- 2 cloves garlic, peeled and finely chopped
- 15 g fresh flat-leaf parsley, little reserved for garnish, remainder cut into strips
- Preheat the oven to 350u0b0F. Place the ciabatta on a baking sheet and bake for 8-10 mins, until golden brown.
- To make the salsa, mix the tomato, pepper, cucumber, onion, vinegar and 3 tbsp oil. Season with salt, black pepper and a pinch of sugar.
- Heat 2 tbsp oil in a frying pan and cook the prawns for 2 mins. Add the garlic and parsley and saute for 1 min. Remove from the heat and season with salt and black pepper.
- Place 2 slices ciabatta on each of 4 plates and spoon the prawns on top. Top with the salsa and garnish with parsley.
