Moroccan Beef Crepes
- 1 tbsp vegetable or olive oil
- 1 medium onion, finely chopped
- 1 medium carrot, coarsely grated
- 1 1/2 tbsp Moroccan spice mix
- 1 1/3 lbs ground beef
- 2 large tomatoes, finely chopped
- 2 tbsp chopped cilantro, plus additional leaves, to serve
- 8 None frozen crepes, thawed
- 1/2 cup plain yogurt
- 1/2 tsp grated lemon peel
- None None Steamed vegetables, to serve
- Preheat the oven to 400u0b0F. Spray a 13 x 9 inch baking dish with no stick cooking spray.
- Heat oil in a large skillet on medium heat. Add onion and carrot; cook, stirring, 5 mins, or until softened. Add spice mix; cook, stirring, 1 min, or until fragrant.
- Add ground beef; cook, stirring with a wooden spoon to break up lumps, 5 mins, or until browned. Add tomato; simmer, uncovered, 3-4 mins. Remove from heat; stir in cilantro
- For each crepe, place 1/4 cup ground beef mixture along one edge; roll up to enclose filling. Place in prepared dish, seam-side down.
- Bake 10 mins, or until crepes are heated through.
- Top crepes with yogurt, lemon peel and cilantro leaves. Serve with vegetables.
