Lemon Meringue Kisses
- 3 None egg whites
- 1/4 tsp cream of tartar
- 1 cup granulated sugar
- 2 tsp cornstarch
- 1 tsp white vinegar
- 2 tsp yellow food coloring
- 1/3 cup heavy cream
- 1/3 cup store-bought lemon curd
- Preheat oven to 250u0b0F. Line 2 large baking trays with parchment paper. Whip egg whites, cream of tartar and 1/4 cup sugar to stiff peaks. Add remaining sugar and whisk for 3 mins, or until sugar dissolves. Add cornstarch and vinegar and whisk until just combined. Lightly fold in 2-3 drop food coloring.
- Transfer to a piping bag fitted with a 3/4 inch plain tip. Pipe 1 inch discs onto prepared trays, about 1 1/4 inches apart. Dip a butter knife into remaining food coloring and swirl through meringue tops. Bake for 45 mins, or until dry to the touch. Let cool in oven with door ajar.
- Whip heavy cream to stiff peaks then fold into lemon curd until just combined. Sandwich meringues with 1 tsp lightened lemon curd. Serve.
