Autumn Chicken Casserole
- 1 lb fresh fava beans, shelled
- 1 1/4 lbs fresh green beans, sliced into 2 inch pieces
- 4 tbsp butter or margarine
- 3 tbsp flour
- 2 1/2 cups milk
- 4 oz Gorgonzola cheese, chopped coarsely
- 4 None chicken breasts
- 1 tbsp sunflower oil
- 1 14 oz can pear halves in juice, drained and halved again
- 1/2 cup Gouda cheese, shredded
- Preheat the oven to 400u0b0F.
- Cook the fava beans in boiling salted water for about 10 mins, adding the green beans after 5 mins. Drain and set aside. Melt the butter in a saucepan, stir in the flour and cook for 1-2 mins. Add the milk while stirring, bring to a boil and simmer for 3-5 mins. Stir in the Gorgonzola cheese, and season to taste. Stir in the beans and pears.
- Heat the oil in a large skillet and cook the chicken for about 4 mins on each side. Put the chicken into a greased baking dish and add the bean and cheese sauce, top with the shredded Gouda. Bake for about 20 mins. Cook the bacon in a skillet until crisp and crumble over the casserole before serving.
