Summer Fruit Poached In White Wine
- 1 cup sugar
- 1 None vanilla bean, split lengthwise and seeds scraped out
- 1 cup white wine
- 2 1/4 lbs stone fruit, such as plums, peaches and nectarines
- None None Whipped cream and biscotti, to serve
- Place the sugar, vanilla and 4 cups water in a large saucepan on medium heat. Stir until the sugar dissolves. Increase the heat to high and boil for 5 mins.
- Add the wine and fruit. Poach fruit gently on low heat for 8-10 mins, carefully turning several times to coat evenly, until just tender.
- Carefully remove the fruit with a slotted spoon and set aside to cool. Once cool, peel away and discard the skins. Arrange the fruit in a serving bowl.
- Return the syrup to medium heat and boil for 10 mins, until reduced by about one-third. Cool completely before pouring over the fruit. Serve with cream and biscotti, if desired.
