Creamy Spinach Soup
- 3 tbsp butter, cubed
- 1 None onion, finely chopped
- 2 cloves garlic, crushed
- 1/4 cup flour
- 3 cups chicken stock
- 1 pkg (16 oz) frozen spinach, thawed and drained
- 1 cup heavy cream, plus additional, to serve
- 1/2 cup milk
- None None Crispy prosciutto, crusty bread, to serve
- Melt butter in a large saucepan on medium heat. Saute onion and garlic for 3-4 mins, until tender.
- Add flour and cook, stirring, for 2-3 mins, until lightly browned. Remove from heat. Gradually add stock, stirring until smooth.
- Return to heat and cook, stirring constantly, until mixture boils and thickens. Stir in spinach and bring to a boil. Reduce heat to low. Simmer for 5 mins.
- Use an immersion blender or food processor to puree until smooth. Stir in cream and milk. Reheat gently and season to taste.
- Serve topped with a swirl of cream and prosciutto. Accompany with crusty bread.
