Creamy Spinach Soup

  1. Melt butter in a large saucepan on medium heat. Saute onion and garlic for 3-4 mins, until tender.
  2. Add flour and cook, stirring, for 2-3 mins, until lightly browned. Remove from heat. Gradually add stock, stirring until smooth.
  3. Return to heat and cook, stirring constantly, until mixture boils and thickens. Stir in spinach and bring to a boil. Reduce heat to low. Simmer for 5 mins.
  4. Use an immersion blender or food processor to puree until smooth. Stir in cream and milk. Reheat gently and season to taste.
  5. Serve topped with a swirl of cream and prosciutto. Accompany with crusty bread.
