Stir Fried Pork And Asian Greens
- 1 tbsp oil
- 1 lb pork fillet, trimmed and sliced
- 1 None onion, sliced
- 1 clove garlic, minced
- 1 tsp grated fresh ginger
- 2 bunches baby bok choy, quartered
- 1 bunch broccolini
- 3.5 oz sugar snap peas, trimmed
- 1/4 cup reduced-salt soy sauce
- 1/4 cup sweet chili sauce
- 1/4 cup lime or lemon juice
- 1/2 cup fresh cilantro leaves, to serve
- Heat oil in a wok or large frying pan. Stir-fry pork for 2-3 mins. Transfer to a plate.
- Add onion, garlic and ginger to wok and stir-fry for 1-2 mins, until tender.
- Return pork to wok along with baby bok choy, broccolini, sugar snap peas, soy sauce, sweet chili sauce and lime juice. Stir- fry for 2-3 mins, until greens begin to wilt. Serve sprinkled with cilantro.
