Stuffed Tomatoes
- 100 g long-grain rice
- 1 tbsp oil
- 2 None shallots, peeled and finely diced
- 500 g beef mince
- 8 None beef tomatoes, lids cut off, flesh scooped out and diced
- 1/2 tsp dried oregano
- 75 g feta, crumbled
- 125 ml vegetable stock
- 200 g tzatziki
- Preheat the oven to 325u0b0F. Cook the rice in boiling salted water according to the package instructions. Heat the oil in a frying pan and saute the shallots for 2 mins. Add the ground beef and cook for 5 mins, breaking up into small pieces. Add the diced tomato flesh and cook for 2 mins. Stir in the oregano and season with salt and black pepper.
- Drain the rice and mix with the feta. Add the rice mixture to the ground beef. Then spoon that mixture into the tomatoes. Place in a roasting pan and pour over the stock. Bake for 10 mins, then place the lids on the tomatoes and bake for a further 10 mins. Serve with tzatziki.
