Chocolate Cake
- 4 medium eggs, separated
- 300 g caster sugar
- 175 g butter, melted
- 150 g plain flour
- 40 g cornflour
- 50 g cocoa powder + some for dusting
- 1 1/2 tsp baking powder
- 200 g double cream
- 2 tbsp brandy
- 200 g dark chocolate, broken into pieces
- Preheat oven to 350u0b0F. Whisk together the egg yolks, 3 tbsp lukewarm water and sugar until thick and frothy. Gently fold in the melted butter then the flour, cornstarch, 1/3 cup cocoa powder and baking powder.
- Whisk the egg whites with a pinch of salt until stiff then carefully fold into the batter. Transfer to a lined springform cake pan and bake for 30-40 mins. Cool for 15-20 mins in the pan then remove and cool completely on a wire rack. Transfer to a serving plate.
- Bring the cream to a boil, remove from the heat and stir in the brandy and chocolate until chocolate is completely melted. Cool for 5 mins then spread on the cake. Leave to set in a cool place for 2 hours then dust with cocoa powder and serve.
