Chocolate Cake

  1. Preheat oven to 350u0b0F. Whisk together the egg yolks, 3 tbsp lukewarm water and sugar until thick and frothy. Gently fold in the melted butter then the flour, cornstarch, 1/3 cup cocoa powder and baking powder.
  2. Whisk the egg whites with a pinch of salt until stiff then carefully fold into the batter. Transfer to a lined springform cake pan and bake for 30-40 mins. Cool for 15-20 mins in the pan then remove and cool completely on a wire rack. Transfer to a serving plate.
  3. Bring the cream to a boil, remove from the heat and stir in the brandy and chocolate until chocolate is completely melted. Cool for 5 mins then spread on the cake. Leave to set in a cool place for 2 hours then dust with cocoa powder and serve.
