Swiss Cheese And Tomato Tart
- 12 None sheets phyllo pastry
- None None olive oil cooking spray
- 2/3 lb small roma tomatoes, halved lengthwise
- 6 None thin slices Swiss cheese
- 5 large eggs, at room temperature
- 3/4 cup light cream
- None None basil leaves, to serve
- None None mixed greens, to serve
- Preheat oven to 350u0b0F. For the pastry shell, line the base and sides of an 8 inch springform cake pan with the phyllo pastry, spraying between the sheets with the olive oil. Tuck the edges into the pan and place on a baking sheet.
- Arrange the tomatoes and cheese in the pastry shell. Whisk the eggs and cream in a large bowl. Season with salt and pepper and pour on top of the tomatoes. Bake for 40-45 mins or until golden brown and just set. Let cool for 15 mins then sprinkle with basil and serve with the mixed greens.
