Chicken Wrapped In Prosciutto With Sage
- 1 1/3 lb potatoes, scrubbed and cut into wedges
- 2 tbsp olive oil, divided
- 4 None chicken breast, halved
- 4 None slices prosciutto, halved lengthways
- 4 leaves sage
- 1 lb broccoli florets
- 1 None garlic clove, thinly sliced
- 1 cup chicken stock
- Preheat the oven to 400u0b0F. Place the potato wedges on a large baking sheet. Season with salt and freshly ground black pepper. Drizzle over 1 tbsp of the oil and toss well to coat. Roast for 30 mins.
- Wrap the chicken pieces in a strip of prosciutto, place a sage leaf on top and secure with a skewer.
- Cook the broccoli in boiling water for 5-8 mins until tender. Drain.
- Heat the remaining oil in a large, deep frying pan, fry the chicken for 4-5 mins each side until cooked through (you may need to do this in batches). Remove from the pan and keep warm.
- Add the garlic to the frying pan and cook briefly. Pour in the chicken stock and bring to a boil. Serve with the chicken, broccoli and potato wedges.
