Savory Bread Pudding
- 1/2 cup mild salsa
- 1 None baguette, cut into 1/3 inch slices
- 5.25 oz mixed antipasto vegetables, chopped
- 3 oz feta cheese, crumbled
- 8 None eggs
- 1 cup milk
- 2 oz Parmesan cheese, grated
- None None roasted cherry tomatoes, to serve
- Preheat oven to 350u0b0F. Spread salsa evenly over 1 side of each piece of bread. Arrange 1/2 the slices, salsa-side up, in 4 individual or 1 large baking dish. Place inside of a roasting pan. Arrange antipasto vegetables and feta evenly over top.
- Whisk together eggs and milk then season. Pour 1/2 the mixture over bread, pressing down gently with fingertips. Top with remaining slices of bread, salsa-side down. Pour remaining egg mixture over top, pressing down to ensure all bread is soaked. Sprinkle with Parmesan.
- Add enough hot water to come halfway up sides of baking dish (or dishes) and bake for 15-20 mins (35-40 mins, if large). Serve with roasted cherry tomatoes.
