Fruit And Nut Quickbread
- 6 oz dried apricots, halved
- 6 oz pitted dates, chopped
- 1 cup raisins
- 1 1/4 cups walnut pieces
- 2 cups orange juice
- 1 tsp baking soda
- 3/4 cup brown sugar
- 2 None large eggs, lightly beaten
- 2 1/4 cups self-rising flour
- 1/2 tsp ground cinnamon
- 1 tsp ground ginger
- Preheat oven to 350u0b0F. Lightly grease and line 2 (8x4 inch) loaf pans with parchment paper.
- In a medium saucepan, combine dried fruit, walnuts and orange juice. Stir over low heat until simmering. Cook for 5-6 mins, stirring occasionally, until liquid has almost been absorbed. Stir in baking soda then transfer to a large bowl. Whisk together sugar and eggs then add to fruit mixture. Stir in flour and spices until just combined. Transfer to prepared pans and bake for 30-35 mins, until a skewer inserted in the center comes out clean.
- Let bread cool in pans for 10 mins then transfer to a wire rack to cool completely. Serve sliced.
