Cherry Coconut Bars
- 6 1/3 oz dark chocolate, chopped
- 3 large eggs, at room temperature, lightly whisked
- 6 oz dried, unsweetened coconut (about 2 cups)
- 1 cup sugar
- 3 1/2 oz candied cherries, finely chopped
- None None Powdered sugar, to dust
- Preheat oven to 350u0b0F. Grease and line a 9 x13-inch pan with parchment, extending paper at long sides for handles.
- Place chocolate in a microwave-safe bowl. Microwave on High (100%) in 30-second bursts, stirring, until melted and smooth.
- Spread melted chocolate evenly over base of prepared pan. Chill for 10 minutes or until set.
- Combine egg, coconut and sugar in a bowl. Stir in cherries. Pour over chocolate in pan; level surface. Bake for 20-25 minutes or until golden. Cool completely in pan. Remove from pan, dust with powdered sugar, and slice to serve.
