Rice And Pigeon Peas(Arroz Con Gandules)

  1. Saute ham and salt pork.
  2. Add peppers, tomatoes, onion, tomato sauce and garlic; simmer for a few minutes.
  3. Add capers, olives, achiote coloring and rice.
  4. Mix well and let cook for two to three minutes.
  5. Add the pigeon peas, water and salt.
  6. Mix thoroughly. Cook slowly until the liquid has evaporated.
  7. Stir, cover and cook until the rice is tender.
  8. Serve hot.
