Bacon, Tomato And Mushroom Tartine With Lemon, Chili And Garlic Butter
- 4 slices bacon
- 2 None tomatoes, halved
- 4 None cherry tomatoes, halved
- 2 None portobello mushrooms
- 4 slices sourdough bread
- None None FOR THE LEMON, CHILI AND GARLIC BUTTER
- 1/2 cup butter, softened
- 1 None lemon, zested, 2 tbsp juice reserved
- 1 tsp finely diced fresh red chili
- 1 tsp finely chopped fresh herbs
- 2 cloves garlic, finely chopped
- 1/2 tsp flaky sea salt
- Preheat oven to 325u0b0F. Line a large baking tray with parchment paper.
- Arrange bacon, tomatoes, mushrooms and bread in a single layer on prepared tray. Beat together all ingredients for butter then brush generously over bread, mushrooms and tomatoes. Bake for 10-15 mins, until bacon is crispy. Assemble bacon, tomatoes and mushrooms over toast. Serve.
