Sweet Onion And Fig Bruschetta

  1. Heat 2 tbsp of the olive oil in a large skillet on medium heat. Add the onions; cook for 10 mins until soft and pale golden. Stir in figs and garlic. Add the red wine and vinegar. Simmer, uncovered, for 10 mins or until most of the liquid has evaporated. Stir in sugar and 2 tbsp of the rosemary; season. Cool.
  2. Preheat the oven to 400u0b0F. Place the bread slices on a baking sheet in a single layer. Drizzle with remaining 2 tbsp oil. Bake for 6-8 mins until the bread is pale golden and crisp. Cool slightly.
  3. Thinly slice the cheese. Top the bread slices with the fig mixture and cheese. Season with pepper; Sprinkle with the remaining 2 tbsp rosemary. Bake for 5 mins until the cheese melts.
