Gluten-Free Muesli
- 3 cups rolled brown rice (brown rice flakes)
- 2 cups puffed brown rice
- 2 cups rice bran flakes
- 3/4 cup unsalted pistachio kernels
- 1/2 cup dried pears, chopped
- 1/2 cup dried apricots, chopped
- 1 cup flaxseeds (linseeds)
- 1 cup sunflower seeds
- 1 cup almonds
- None None Fresh fruit of your choice, to serve
- None None Low fat milk or yogurt, to serve
- Mix rolled rice, puffed rice, rice bran flakes, pistachios and chopped fruit in a large bowl.
- Place flaxseeds, sunflower seeds and almonds in a food processor. Process until lightly crushed. Stir into puffed rice mixture until combined. Store in an airtight container for up to 5 days.
- Serve 1/2 cup portions of the muesli with fresh fruit and low fat milk or yogurt.
