Minestrone Soup
- 2 qts. homemade beef stock
- 1 large onion, chopped
- 1 clove garlic, minced
- 3 stalks celery with leaves, chopped
- 1 cup diced carrots
- 1 cup diced raw potato
- 1/2 cup diced zucchini
- 1 can red kidney beans, drained
- 1 (16 oz.) can tomatoes, chopped
- 1 (8 oz.) can tomato sauce
- 1/2 cup uncooked spaghetti
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 1/4 tsp. chili powder
- 1/4 tsp. oregano
- 1/4 cup fresh parsley, chopped
- Remove meat from bones used in making stock and add to stock. Saute in 2 Tbsp. oil: onion, garlic clove, celery stalks, carrot, raw potato, and zucchini. Stir until veggies glisten. Add stock along with: kidney beans, can of tomatoes, and tomato sauce. Simmer 30 minutes stirring often. Add 1/2 cup uncooked spaghetti broken into 1 inch pieces. Add salt, pepper, chili powder, oregano, and parsley. Simmer 20 minutes.
