Mustard Beef Crostini
- 2 tbsp whole grain mustard
- 2 tbsp horseradish cream
- 2 (15 oz) New York strip steaks
- 1/4 cup sour cream
- 1 None French baguette, cut into 1/3 inch-thick slices
- 2 tsp olive oil
- 24 None baby spinach leaves
- Combine 1 tbsp mustard and 1 tbsp horseradish in a small bowl. Spread over steaks then chill, covered, until required. Combine remaining mustard and horseradish with sour cream in a small bowl. Set aside.
- Preheat oven to 325u0b0F. Arrange crostini in a single layer on 2-3 baking trays. Lightly coat with oil then bake until toasted on both sides.
- Heat oil in a large frying pan over high heat. Cook steaks until seared on both sides and cooked to your liking. Cover, let rest for 5 mins then slice thinly.
- Top crostini with spinach, steak and sour cream mixture. Serve immediately.
