Orange, Polenta And Almond Cake

  1. Preheat the oven to 325u0b0F. Lightly grease an 8-inch round cake pan. Line the bottom with parchment paper.
  2. Beat butter, sugar and vanilla in a bowl with an electric mixer until creamy. Add eggs, one at a time, beating well after each addition.
  3. Fold in polenta, ground almond, baking powder, and orange peel and juice. Pour into prepared pan, smoothing the top.
  4. Bake for 55-60 mins, until toothpick inserted into center comes out clean. Cool in pan for 5 mins. Remove from pan; cool completely on a wire rack. Serve topped with whipped cream and orange slices.
