Applespice Muffins
- 2 1/2 cups self-rising flour
- 1/2 tsp baking soda
- 1/2 tsp ground cinnamon
- 1 tsp ground ginger
- 1/4 tsp ground nutmeg
- 1 pinch ground cloves
- 1/4 cup firmly packed light brown sugar
- 1 cup canned apple pie filling
- 1 None egg, lightly beaten
- 3/4 cup milk
- 1/4 cup plus 2 tbsp melted butter
- 1 small apple
- 2 tbsp cinnamon sugar
- Preheat the oven to 400u0b0F. Grease a 6-cup Texas muffin pan.
- Sift the flour, baking soda, spices and brown sugar into a large bowl. Stir in the apple pie filling. Add the egg, milk and 1/4 cup melted butter; mix until just combined. Spoon the mixture into the prepared pan.
- Peel, core and halve the apple; slice each half thinly. Place an apple slice on top of each muffin. Brush with 2 tbsp melted butter and sprinkle with cinnamon sugar.
- Bake for about 25 mins until toothpick inserted into center comes out clean. Cool in pan 5 mins. Remove from pan; cool on wire rack.
