Cheese Puffs
- 8 tbsp (1 stick) unsalted butter, cut into cubes
- 1 tsp sugar
- 1/2 tsp salt
- 1 cup flour, sifted
- 5 None eggs
- 5 oz Gruyere or Swiss cheese, grated
- 1 None egg, lightly beaten, to glaze
- Preheat the oven to 400u0b0F. Lightly grease 2 baking pans.
- Heat the butter, sugar and salt with 1 cup water in a medium saucepan on medium heat. Bring to a boil. Remove from the heat.
- Add the flour and stir vigorously with a wooden spoon. Return to the heat and continue stirring for 5 mins, until the mixture comes away from the side of the pan.
- Transfer to a bowl and cool slightly. Using an electric beater, add the eggs, one at a time, beating well after each addition. Beat on low speed for 3 mins, until the mixture is smooth and holds its shape. Stir in cheese.
- Spoon the mixture into a pastry bag fitted with a 1/2-inch plain tip. Pipe 36 rounds onto the prepared trays, leaving space for spreading. Brush with beaten egg.
- Bake for 20 mins. Reduce the oven temperature to 375u0b0F. Bake for 10 mins, until golden and crisp. Serve.
