Chocolate Coconut Marble Cake

  1. Preheat the oven to 325u0b0F. Grease a 10 inch diameter cake ring and sprinkle with flour. Beat the butter, sugar and a pinch of salt with a hand mixer for 2-3 mins, until creamy. Beat in the eggs one at a time. Mix the flour and baking powder together and gradually stir into the butter mixture, alternating with the coconut milk, until all are incorporated.
  2. Divide the batter into 2 equal portions. Stir the cocoa powder and 1/4 of the chocolate into one half, and the coconut into the other. Spoon the coconut batter into the pan and spoon the chocolate batter on top. Swirl with the handle of a wooden spoon, then bake for 45 mins, until a skewer comes out clean. Allow to cool for 2 hours.
  3. Melt the coconut oil and the remaining chocolate in a heatproof bowl set over a pot of simmering water. Stir and allow to cool for 10 mins. Turn the cake out of the pan and drizzle with the chocolate. Allow to set for 30 mins, then serve.
