Cheesy Pancakes

  1. Sift flour into a bowl; make a well in centre.
  2. Add combined milk and egg; whisk together gradually, drawing in flour, until a smooth batter is achieved. Fold through grated cheese and chives.
  3. Heat a non-stick frying pan on medium; spray with oil.
  4. Working in four batches, spoon tablespoons of batter into pan. Cook 1-2 minutes each batch, until bubbles begin to appear on surface. Turn and cook other side 1 minute. Transfer to a wire rack to cool.
  5. In a small bowl, combine cream cheese and celery; season to taste. Spread cream cheese mixture over half the pikelets; sandwich together
