Vegetable Noodle Stir-Fry
- 1 tbsp oil
- 1 None onion, sliced
- 1 None carrot, thinly sliced
- 1 None green bell pepper, deseeded, chopped
- 4 None baby pak choy, leaves separated
- 3.5 oz mushrooms, sliced
- 1 clove garlic, minced
- 6 oz instant noodles, cooked
- 2 tbsp kecap manis (sweet soy sauce)
- 2 tbsp soy sauce + extra, to serve
- 1/4 cup peanuts, chopped
- None None shredded spring onion, to serve
- None None sliced chili, to serve
- Heat oil in a wok or large frying pan over high heat. Stir-fry onion, carrot, pepper, pak choy, mushrooms and garlic for 3-4 mins, until tender. Add noodles, kecap manis and soy sauce. Stir-fry for 1-2 mins, until heated through.
- Sprinkle with peanuts, spring onion and chili. Drizzle with soy sauce.
