Sausage And Tomato Penne
- 1 lb penne
- 1 tbsp olive oil
- 1 None red pepper, deseeded, sliced
- 1 None onion, sliced
- 2 cloves garlic, crushed
- 1 None red chile, deseeded, chopped
- 4 None sausages, thickly sliced
- 1 None (14-oz) can chopped tomatoes
- 1/2 cup white wine, vegetable stock, or water
- 1/3 cup pitted black olives
- 1 2/3 cup baby spinach leaves
- 2/3 cup feta, crumbled
- None None Garlic bread, to serve
- Cook pasta in a large pan of boiling salted water, according to pack instructions. Drain well; return to pan.
- Meanwhile, heat oil in a large skillet on medium. Saute pepper, onion, garlic, and chile for 3-4 mins, until softened. Add sausages; cook, stirring, for 2-3 mins, until lightly browned.
- Add tomatoes, wine (or stock or water) and olives; simmer, stirring occasionally, for 2-3 mins. Remove from heat; stir in spinach and stand until it starts to wilt.
- Toss sauce with drained pasta. Season to taste and top with feta. Serve with garlic bread.
