Chicken Sausage And Orzo Salad

  1. For the lemon dressing, whisk lemon juice, garlic and 1/3 cup oil in a small bowl. Season to taste.
  2. Cook pasta in a large saucepan of boiling water according to package directions; drain. Rinse under cold running water; drain.
  3. Meanwhile, heat 1/2 tbsp oil in a large skillet on medium heat. Cook sausages, turning occasionally, for 10 mins, or until browned. Remove from pan; cover to keep warm. Heat remaining oil in same pan on high heat. Cook mushrooms for 5 mins, or until browned.
  4. Thickly slice sausages. Combine sausages, pasta, mushrooms, remaining ingredients and lemon dressing in a large bowl; toss to combine. Season to taste.
