Fish Stew With Cheddar
- 3 tbsp butter
- 4 oz onions, trimmed and diced
- 2 None zucchini, thinly sliced
- 3 None tomatoes, deseeded and diced
- 1 tbsp all purpose flour
- 1 2/3 cup vegetable stock
- 1/2 cup milk
- 2 tbsp wholegrain mustard
- 7 oz Cheddar, grated
- 1 2/3 lb cod fillet, cut into cubes
- Melt half of the butter in a saucepan, add the onions and saute for 3-4 mins. Add the zucchini and tomatoes then season and saute, stirring, for 4-5 mins.
- Heat the rest of the butter in a separate saucepan and mix in the flour. Saute for 1-2 mins. Gradually mix in the stock and milk. Simmer, stirring, for 4-5 mins until thickened.
- Mix the mustard and cheese into the white sauce then stir in the fish and vegetables. Simmer for 8-10 mins, stirring occasionally.
