Fish Stew With Cheddar

  1. Melt half of the butter in a saucepan, add the onions and saute for 3-4 mins. Add the zucchini and tomatoes then season and saute, stirring, for 4-5 mins.
  2. Heat the rest of the butter in a separate saucepan and mix in the flour. Saute for 1-2 mins. Gradually mix in the stock and milk. Simmer, stirring, for 4-5 mins until thickened.
  3. Mix the mustard and cheese into the white sauce then stir in the fish and vegetables. Simmer for 8-10 mins, stirring occasionally.
