Prosciutto Steaks With Creamy Mushrooms
- 4 slices prosciutto
- 4 None beef tenderloin steaks
- None None Olive oil
- 1 tbsp snipped chives
- None None Mashed potato and salad, to serve
- None None FOR THE CREAMY MUSHROOMS
- 4 tbsp (1/2 stick) butter
- 2 tbsp olive oil
- 1 lb mixed mushrooms of choice, thickly sliced
- 2 cloves garlic, crushed
- 1/2 cup white wine
- 2 tsp Dijon mustard
- 1/2 cup heavy cream
- Heat a grill pan on high heat or preheat the grill to medium-high. Wrap prosciutto around steaks. Brush steaks with oil. Grill for 3-4 mins, each side, or until cooked to desired doneness.
- For the creamy mushrooms, heat butter and oil in a large skillet on high heat. Add mushrooms and garlic. Cook, stirring, for 3-4 mins until mushrooms begin to soften. Stir in wine and mustard. Cook, stirring, until reduced by half. Pour in cream. Bring to a boil, stirring. Reduce heat to low; simmer for 3-4 mins, until slightly thickened. Season to taste.
- Spoon creamy mushrooms over steak. Sprinkle with chives. Accompany with mashed potato and salad.
