Nectarine Cake
- 3 None eggs
- 1/2 cup milk
- 1 1/2 cups granulated sugar
- 2 1/2 cups self-rising flour
- 1 tsp vanilla extract
- 6 medium nectarines, peeled and sliced
- 1/2 cup ground almonds
- 3 tbsp unsalted butter, softened, diced
- None None Powdered sugar, to dust
- Preheat the oven to 350u0b0F. Grease a 9-inch springform pan; line bottom and sides with parchment paper.
- Process the eggs, milk, sugar, flour and vanilla in a food processor until a thick batter forms. Transfer the batter to a large bowl and fold in the nectarines.
- Spoon into the prepared pan. Sprinkle the top with almonds and dot with butter.
- Bake for 1 hour, or until toothpick inserted into center comes out clean. Cool completely in pan on a wire rack. Remove from pan. Dust with powdered sugar.
