Nectarine Cake

  1. Preheat the oven to 350u0b0F. Grease a 9-inch springform pan; line bottom and sides with parchment paper.
  2. Process the eggs, milk, sugar, flour and vanilla in a food processor until a thick batter forms. Transfer the batter to a large bowl and fold in the nectarines.
  3. Spoon into the prepared pan. Sprinkle the top with almonds and dot with butter.
  4. Bake for 1 hour, or until toothpick inserted into center comes out clean. Cool completely in pan on a wire rack. Remove from pan. Dust with powdered sugar.
