Banana And Chocolate Cupcakes
- 1/2 cup butter, chopped, softened
- 3/4 cup brown sugar, plus 2 tbsp extra
- 2 None eggs, lightly beaten
- 1/2 cup self-rising flour, sifted
- 1 tsp baking soda
- 9.5 oz very ripe mashed banana (2 medium bananas)
- 3/4 cup sour cream
- 1 tbsp milk
- None None Ganache
- 8.75 oz milk chocolate, finely chopped
- 1/2 cup heavy cream
- 18 None dried banana chips, to decorate
- Preheat oven to 350u0b0F. Line 18 recesses of 2 - 12-cup muffin pans with paper liners.
- Cream butter and sugar until light and fluffy. Add eggs, 1 at a time, beating well after each addition. Add flour and baking soda. Add mashed banana, sour cream and milk and mix until combined. Transfer to prepared pan. Bake for 20-25 mins, until a skewer inserted in the center comes out clean. Let cool in pan for 5 mins then transfer to a wire rack to cool completely.
- Meanwhile, to make the ganache, stir chocolate and cream over low heat until smooth. Let cool to room temperature, until thickened. Spread ganache over cooled cupcakes. Decorate with banana chips.
