Chocolate Banana Cakes

  1. Preheat oven to 350u0b0F. Cream the butter and 1/2 of the sugar together. Add the eggs one at a time then fold in the flour and baking powder. Stir in the milk and about 3 oz of chocolate then transfer to a lined baking tray about 13 x 15 inch. Smooth the top and bake in the center of the oven for about 20 minutes. Remove and cool, in the baking tray, on a wire rack.
  2. Meanwhile, mix about 2 oz sugar and the sugar glaze in a pan over a low heat. Stir in the banana juice and remaining chocolate until melted.
  3. Lay the banana halves on top of the sponge base and sprinkle with 2 tbsp lemon juice. Pour the banana chocolate mixture over the top, smooth and refrigerate for about 1 1/2 hours until set. Cut into 52 equal squares and serve with the pomegranate seeds.
