Passionfruit Bars
- None None Crust
- 2/3 cup butter, softened
- 1/4 cup powdered sugar
- 1/2 tsp vanilla extract
- 1 cup all-purpose flour
- 1/2 cup self-rising flour
- None None Topping
- 8.75 oz marshmallows
- 1/2 cup passionfruit pulp, plus extra to serve
- 1/2 cup milk
- 2 tsp lemon juice
- 2 1/2 cups heavy cream, whipped
- Preheat oven to 350u0b0F. Lightly grease and line a 7 x 11 inch jelly roll pan with parchment paper.
- For the crust: Beat butter, powdered sugar and vanilla together until light and creamy. Fold in combined sifted flours to form a soft dough. Press dough evenly into pan. Prick base all over with a fork. Bake 15 minutes, until golden.
- Meanwhile, make the topping: Combine marshmallows, passionfruit pulp and milk in a heat-proof bowl over a saucepan of simmering water. Stir constantly until melted. Stir in lemon juice. Transfer to a large bowl. Chill 45-50 minutes, stirring every 15 minutes, until slightly thickened.
- Fold half the whipped cream into the marshmallow mixture. Pour over crust. Chill overnight until set.
- Cut into squares. Store in an airtight container in fridge. To serve, top each bar with whipped cream and a teaspoon of extra passionfruit pulp.
