Passionfruit Bars

  1. Preheat oven to 350u0b0F. Lightly grease and line a 7 x 11 inch jelly roll pan with parchment paper.
  2. For the crust: Beat butter, powdered sugar and vanilla together until light and creamy. Fold in combined sifted flours to form a soft dough. Press dough evenly into pan. Prick base all over with a fork. Bake 15 minutes, until golden.
  3. Meanwhile, make the topping: Combine marshmallows, passionfruit pulp and milk in a heat-proof bowl over a saucepan of simmering water. Stir constantly until melted. Stir in lemon juice. Transfer to a large bowl. Chill 45-50 minutes, stirring every 15 minutes, until slightly thickened.
  4. Fold half the whipped cream into the marshmallow mixture. Pour over crust. Chill overnight until set.
  5. Cut into squares. Store in an airtight container in fridge. To serve, top each bar with whipped cream and a teaspoon of extra passionfruit pulp.
