Warm Chicken And Cilantro Salad

  1. Heat peanut oil in a large frying pan over medium-high heat. Cook nuts, stirring, until lightly browned. Remove from pan and let cool.
  2. Add chicken to pan and cook, stirring, until cooked through. Drain on paper towels.
  3. Place nuts and chicken in a large bowl along with cilantro, pepper, celery, tomatoes, avocado, onions and lettuce.
  4. Whisk together mayonnaise, sour cream and lemon juice. Drizzle over salad and toss gently to combine. Season. Serve.
