Cheese And Herb Beignets
- 4 tbsp (1/2 stick) butter, chopped
- 1/2 cup flour
- 1 tsp salt
- 3 None eggs
- 1 1/4 cups finely grated Cheddar cheese
- 1/4 cup chopped parsley
- 1/4 cup chopped chervil
- 1 bunch chives, snipped
- 2 tbsp chopped tarragon
- None None Tomato relish, to serve
- Combine butter and 1/2 cup water in a medium saucepan. Heat on low until butter melts. Bring just to a boil (do not boil).
- Sift flour and salt onto a piece of parchment paper. Add to water mixture all at once, stirring to combine. Cook, stirring, 1 min, until mixture leaves the sides of the saucepan and forms a ball around the spoon. Remove from heat. Transfer mixture to bowl. Cool slightly.
- Using an electric mixer, add eggs one at a time, beating well after each addition, until thick, smooth and glossy. Stir in cheese and herbs. Season to taste.
- Heat oil in a heavy-bottomed saucepan, until a cube of bread sizzles as soon as it is added. Using two dessert spoons, scoop mixture and push off spoon into the hot oil. Cook in batches for 3-4 mins, until puffed and golden all over. Drain on paper towels. Serve hot with relish.
